Cranberry-Orange Pop-Tarts

Let's talk about those Christmas leftovers that are lurking in your fridge.
At the time you thought it'd be a good idea to take home the remaining 2 lbs of mashed potatoes and the barely touched cranberry sauce that your Aunt pushed upon you.
"Sure! We'll eat it!"

That's okay, we'll blame the vodka.
Bad Vodka, bad!

Why not re-purpose those leftovers into tasty little pop tarts and/or hot pockets??

I happened to have left over cranberry-orange sauce left over from dinner along with some Trader Joe's Pie Crust Dough and made Pop-Tarts. You can certainly go the more savory route and stuff them with ham and cheese, mashed potatoes and turkey, the possibilities are endless-get crazy!

Cranberry Orange Pop-Tarts (6-8 tarts)
  • Leftover Cranberry Orange Sauce
  • 1 pkg of your favorite pre-made pie crust dough (or homemade if you're feeling adventurous)
  • egg wash (1 egg and 1 TBS of water- whisked)
Pop-Tart Glaze:
  • 1/2c powdered sugar
  • 1/4 tsp vanilla extract
  • 3 tbs milk
  1. Pre-heat your oven to 350 degrees
  2. Roll out your pie crusts
  3. Using a pizza cutter (or knife) trim your pie crusts so they become rectangular- save the scraps for fun pop tart flare!
  4. Once the crust is trimmed, slice the rectangle in half horizontally and then slice again vertically so you create 3-4 rows- you should end up with 6-8 smaller rectangles per pie crust.
  5. Lay the rectangles out on a parchment paper lined cookie sheet and brush with the egg wash
  6. Flip dough over so the egg wash side is making out with the parchment paper
  7. Fill your tarts with your chosen filling leaving some room on the sides for crimping
  8. Once they are filled, lay the top piece of the tart, so the top and the bottom match up
  9. Crimp the sides together using a fork to seal in the filling
  10. **Optional** Cut out decorative pieces of dough using the scrap dough from trimming using small cookie cutters, once cut- place on top of the Pop-Tart
  11. Brush the top of your tarts with egg wash
  12. Place the prepared Pop-Tarts in the fridge for 30 minutes
  13. Once chilled, poke holes using a fork to the top of the Pop-Tart (I forgot to do this for one of the batches and they puffed more than I had wanted them to)
  14. Bake in the oven for 20-25 minutes until golden brown
  15. Remove from oven and cool on a cooling rack prior to glazing
To prepare the glaze:
  1. Mix all ingredients together until a smooth consistency is achieved
  2. Spread glaze over Pop-Tarts

See, leftovers are fun!
